Paleo Recipes Attempted

 Paleo Spaghetti - Fantastic Recipe with great taste

Spaghetti Squash
Microwave 4-6 minutes, cut in half, scoop out the middle stuff and shred the squash.

The sauce -
3 medium sized tomatoes -cut these in chunks depending on the size you prefer.
Saute onions, garlic, zucchini together and set aside
Cook the meat, (ideally, use grass fed beef...but I used ground sirloin)  Drain the cooked meat, the tomatoes, and combine with the sauteed vegetables.
Cover the combined ingredients and let simmer.

Note this recipe was a little watery, but this may chance the more I make this dish.

Pretty Stinkin' good breakfast

1 egg, scrambled with zucchini, onion, garlic, grape tomatoes, spinach and mushrooms.

Cook the vegetables with extra virgin olive oil and add the egg.  Scramble and mix the ingredients together until the egg is fully cooked.  I added 2 slices of bacon, but it probably wasn't needed.

The Scallops were cooked with onion, garlic and olive oil.  Sear the scallops and set aside.

The greens:
Saute onion, garlic, asparagus, spinach, mushrooms, and celery until the onion begins to clear.  Add in the scallops and let cook for 10-15 minutes.

Note the crabs were nothing to write home about, but the stir fry was fantastic.  Will probably be doing the stir fry again and again.

 Lunch - So not completely Paleo, but still pretty healthy.

2 Bratwurst that were boiled and then finished on the George Foreman Grill to get out as much fat as possible.

Served with a side of sauteed onions, peppers, and mushrooms.  Did this with some olive oil and added some salt and pepper to taste.





Dinner - This will be a meal that will be cooked over and over again.

This was probably the best paleo meal that I have done so far.  This Zucchini Lasagna used my left over spaghetti sauce that was made earlier this week (see above).

The zucchini was sliced using a mandolin.  Put 1/3 of the sauce on the bottom of a non-stick pan then cover with zucchini slices.  I added the rest of my sauteed vegetables from lunch for the next layer.  Add another later of sauce and another layer of zucchini slices.  I topped mine with cheese (not paleo per say, but it made the dish).

Note that the dish was a little watery because of the fresh vegetables, but I drained this extra liquid and let the entire lasagna settle for a little bit.  Again, fantastic meal.



Dinner 4/15/2013

Tonight was some left over chicken breast that was grilled, zucchini, onion and mushroom.  Usual blend cooked in some olive oil.

The new thing tonight.  Cajun Sweet Potato Fries

Cut the sweet potato into small spears.
Lightly coat the spears with olive oil and powders with the cajun mix (salt, pepper, onion powder, garlic powder, paprika, and cayenne pepper)
Cook at 400 degrees for 30 minutes.
